Ingredients

  • 1 cup panko or breadcrumbs (plain or seasoned, your call)
  • 2-3 tbsp grated Parmesan or Pecorino
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika (smoked if you’re feeling fancy)
  • 1/2 tsp dried thyme or oregano
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • optional pinch of chili flakes for heat
  • 2 tbsp olive oil or melted butter

Instructions

  • Preheat your oven to 400°F (200°C) if you’re baking, or heat a skillet over medium heat for toasting. The vibe is crisp, not burnt.
  • In a bowl, combine breadcrumbs, cheese, garlic powder, onion powder, paprika, thyme, salt, pepper, and chili flakes if you want a kick.
  • Drizzle in olive oil or melted butter. Toss until the mixture looks evenly shiny and a little bossy—you want it to cling, not slide off.
  • Pat your protein or veggie surface dry. Sprinkle or press the crumb mix onto the surface so it sticks like a magnet on a fridge door.
  • Bake or pan-sear: for chicken or fish, bake 12–15 minutes (until golden and cooked through); for vegetables, bake 12–18 minutes, or toast the crumbs in a skillet for 2–4 minutes until golden.
  • Rest for a minute, then serve. If you’re feeling dramatic, sprinkle a final pinch of salt or a squeeze of lemon over the top.
