  • 2 tbsp lime juice (yes, fresh is best, no excuses)
  • 1 tbsp rice vinegar
  • 1 tsp soy sauce (use tamari for gluten-free)
  • 1/2 tsp sesame oil
  • 1 clove garlic, minced
  • optional a pinch of chili flakes if you want extra zing

Instructions

  • In a small bowl, whisk together sweet chili sauce, lime juice, rice vinegar, soy sauce, and sesame oil. No fancy equipment needed—just your whisk or a sturdy spoon.
  • Add minced garlic and optional chili flakes. Stir until everything is well combined and smelling irresistible.
  • Taste and adjust. Need more tang? splash of lime. Need more kick? a pinch more chili flakes. You’re the boss here.
  • Transfer to a serving bowl or a tiny jar. Chill for 10 minutes if you’ve got the time—it helps the flavors wake up.
